You Can't Beat a Beet

That's what I get to hear my hubby say every time we're working in the garden around the beets.  Oh, they are so sweet and soft...so much better than store bought.  I am sure anyone who doesn't think they like beets would like these fresh from the earth.  Our favorite use:  roasted in olive oil with salt and pepper tossed in a salad.  We even use the tops, chopped up, in the salad.

Memorial Day

We had a BBQ on Memorial Day and invited a few friends over.

Fishing out by the pond.  Riley caught 2 catfish and 5 copperhead blue gills.  When you ask him what he wants to be when he grows up, he no longer says "A Fireman."  He will answer, "A Fisherman."

Neighbor friends with their 1 1/2 year old son.  Sherry caught quite a few fish too.

Six Weeks Old

New pictures of Abram Oak at six weeks old.  He is wearing his handmade vintage gown from April.  His eyes officially turned brown yesterday and his hair is getting darker too.  His repertoire consists of eating and sleeping.  He is really good at both.

Here is a few pictures of the sky we get to look at every day.  The weather has been fickle lately-- clear skies and 96 degrees by day with big thunder and lightening storms by night.

Summer Time Fun

Grandma bought Riley a sprinkler that hooks up to the garden hose.  It offers great relief from the summer time heat here in Texas.

And it couldn't be more thrilling for this three year old.

Chris Arrives!

Our friend Chris is here for the week!  It feels so nice to have a piece of "home" here in Texas.  To celebrate the occasion, I made homemade ricotta cheese for a lasagna which almost entirely came out of our garden.  Thought I'd photo-document for ya'll to see...

My new Mother's Day cookbook-- I love it!  It is chaulk full of recipes that get the entire family involved...especially little ones.

It was very tasty!  Won't be making lasagna again with out this easy to make, homemade ricotta cheese.  It totally "makes" the dish!

Our Garden is Growing

Here is the progress report of our garden.  This is the view from our front porch.  Tom is in the tractor, baling hay.  It's cuttin' time!...the first of the year.

Our First Visitor

Grandma came from Bakersfield to meet baby Abram.  Riley was especially excited because Grandma loves to play with Riley for hours on end.  And anyone who will sit on his floor and play trains for over 30 minutes (usually my limit) is his best friend.

Can't tell who this little boy is going to look like.  His eyes are still that newborn grey-blue, but my hopes for them staying blue are low since Riley's started out blue and quickly turned brown within the first few months.  I was hoping for a little blond haired- blue eyed chap.  Not looking like that is going to happen.
